About Becky

Hi, I'm Becky! I blog at Bite of Delight, where I share my recipe adventures and the tasty bites of life. I'm a mom to four spunky kids, a wife to an amazing husband, and a lover of all things food. I discovered a love of cooking and baking after I made the leap to become a stay-at-home-mom when my oldest child turned one. What started as a duty to feed my family has turned into a love of creating good food for my favorite people, picky eaters and all! I love creating and sharing recipes, and feeding everyone that walks through our door... and if you don't come to me, I might just leave it on your doorstep!

Hi, Becky here from Bite of Delight!  Today I have a scrumptious twist on not one, but two old favorites.  If you love Thin Mints AND s'mores, you won't want to miss this perfect combination of chocolatey, gooey, crunchy goodness!  It tastes just like a Thin Mint girl scout cookie, only it's stuffed with a golden, toasty marshmallow.  Does it get any better?  I think not.  And if this isn't enough to make your life a little better today, you can have a whole batch ready to go in about 20 minutes … [Read more...]

Banana Bundtlets with Maple & White Chocolate Icing

Banana Bread 10 Main

Banana Bread is a standby at our house.  My kids love to help make it, they love to eat it, and we love to give it to our neighbors!  This is a fun spin on traditional banana bread with the simple but decadent maple & white chocolate icing.  This is our favorite banana bread recipe because it goes together fast, it's lower in fat than most banana bread recipes, and it's moist without being sticky. The baby bundt size is perfect for kids, and perfect for sharing!  I found my pan (that m … [Read more...]

May brings a wild and crazy schedule for our family every year. Not only is it the end of school (with plays and performances and recitals galore!), but it is also the peak of my husband's busy season at work. This year we added in a major remodel...so major that we had to move out of our home to make it happen (thank goodness for wonderful in-laws)! This means a whole lot of extra driving (to two different schools), two homes to keep up, two yards to maintain, and zero spare time. Sometimes … [Read more...]

Honey & Lime Chicken Enchiladas

Chicken Enchiladas main

If you haven't decided what to make for Cinco de Mayo, try these simple but packed-with-flavor enchiladas!  They go together quickly, taste amazing, and make fabulous leftovers.  All of my favorite things in one recipe! We like the uncooked tortillas.  In fact, my kids don't like precooked tortillas.  And I don't blame them, these are the best!  The sauce goes together in a snap and makes tender, moist chicken. Once the chicken is cooked, these go together in just a few minutes.  If … [Read more...]
