Grown Up Grilled Cheese Sandwich

I just made a Grown Up Grilled Cheese Sandwich for lunch and I thought I’d share it with you today!

I have fond memories of rainy days with grilled cheese and tomato soup- it is like an American classic and a childhood rite of passage, am I right?

In my house today, grilled cheese sandwiches are as popular as they were in my childhood home, but when I make them for me and my husband, I add a secret ingredient that changes {almost} everything.

And that secret ingredient is…

Onions.

Yep, onions.

{Sauteed onions, to be exact}

I used to cry when I’d chop onions and cry if I had to eat them- I hated onions and never could understand why someone would waste food by adding an onion to it.

When I was a teenager, I was visiting my aunt and they had a friend of the family over who asked if I would like a grilled cheese sandwich. When he handed it to me, I almost died when he said he added some sauteed onions. My poor sandwich was ruined and I wanted to toss it in the garbage, but he insisted that I try it, and so I did- only to be polite.

I took a bite.

And then my mouth liked it. And I ended up devouring the entire thing. Probably faster than anyone in the room, actually.

It was delicious, and the way I would prepare the classic Grilled Cheese Sandwich would forever be changed. It was like I totally grew up that day or something. ‘Cause liking onions means you are mature, right? It totally does.

The Grilled Cheese Sandwich was the food that changed me and my old aversion to onions.

So before you head to the stove to grill up a cheese sandwich, slice some onions and cook them in the pan with a small pat of butter. This will sort of caramelize them, bringing out their sweetness and getting rid of the bitter taste- {which still makes me want to scratch my tongue off!}  I honestly never knew onions could be sweet until they topped my grilled cheese sandwich so long ago!

The other MUST for a classic grilled cheese in my home is Kraft Singles or Deli Deluxe Cheese. I’m not sure if it is the nostalgia of this cheese that makes the sandwich amazing, but I have to have it.

So once your onions have caramelized, remove them from the pan and set aside. Throw a piece of bread in the same pan (this alleviates the need to butter the bread, though you can certainly add more butter if you’d like!) then, top the slice of bread with a slice or 2 of Kraft cheese, your onions, then the top slice of bread. Cook on medium heat for just a minute or 2 on each side or until the bread is golden and the cheese has melted.

Your tastes buds are going to love you.

And you will totally be more mature as soon as you swallow the last bite. I pinky promise.

  3. Yum. Seriously…what a genius idea. I LOVE caramelized onions but have never thought to put them in grilled cheese! Thanks so much for the tip! I need to be careful, though. I DID end up buying the chocolate swimsuit from Essentials (thanks for your help!!), and I love it, so this grilled cheese trick could be dangerous! ;)

  4. Your story reminded me of a time, I went to my best friend’s house and she asked if I wanted some homemade Macaroni and Cheese. She had made some for our kids who were having a playdate. Now, all I’ve ever had growing up (and now) is the orange powder in a box kind of mac and cheese. So, I was reluctant but obliged. Turns out her homemade mac and cheese was made with American cheese, so it tasted just like a grilled cheese sandwich. Then, to top it off, the adults got to top their bowls of mac and cheese with sauteed onions and crumbled bacon. OMG! That is by far the best macaroni and cheese, I have EVER had. I love it so much that she knows to save me a bowl (or two) if I’m at her house when she makes it. :)
