My family LOVES Kabobs of all varieties. I especially love that you can feed a crowd with delicious, fresh ingredients in a semi-customizable fashion. I prep the fruits, veggies and meats & cheeses, then each person builds their kabobs to their liking, adding extra of the ingredients they love and leaving off the stuff they don’t. These Italian Chicken Kabobs are one of the easiest sorts to prep and put together. They are a perfect dinner when you feel like eating something cool or fresh, or a perfect side dish/ appetizer for your next dinner party. (We had these along side some homemade pizza and it was delish!)
How To Make Italian Chicken Kabobs
Yields 40 Kabobs
Ingredients:
1 lb chicken breast, cooked and cubed
40-50 Pimento-stuffed green olives
40-50 large black olives
40-50 thin slices of pepperoni
40-50 bite-sized cubes of cheddar or mozzarella cheese
1 c. Kraft Italian Dressing ( I use Zesty Italian)
1 bag (approx 9 oz) frozen mini cheese ravioli, thawed (you could also use tortellini)
fresh parsley sprigs, optional
Directions:
Place the chicken, ravioli, olives and Kraft salad dressing in a large plastic resealable bag. Add the Italian dressing. Seal bag and turn to coat; refrigerate for 15 minutes. Drain and discard marinade.
To build each kabob, thread your meats, olives and cheese on a skewer, adding fresh parsley here and there to make it look pretty! skewer.
You can drizzle more Kraft Italian dressing over the tops of each kabob or serve it on the side for dipping.
