Peanut Butter Chocolate Chip Cookies

Hello again, Somewhat Simple readers! It’s Alicia from The Baker Upstairs and I have another delightful treat to share with you today. I mentioned last month when I shared my chocolate peanut butter cupcakes that my husband just can’t get enough of that flavor combination, so these peanut butter chocolate chip cookies were right up his alley! I changed my work schedule recently, and I’m still trying to get used to working more days and balancing work and family life. Whenever I’m stressed, I find that baking cookies really helps, so these cookies were just the ticket yesterday afternoon when I finished my work week. All my stress just melted away at the first bite! (Okay, not really, but it was pretty great anyway.)

peanut_butter_chocolate_chip_cookies_2These peanut butter cookies are rich and buttery without being overly sweet, and they’re super soft as well. The chocolate chips sprinkled throughout are deliciously gooey and make the cookies extra yummy! You’ll definitely want a glass of cold milk with these rich cookies, and they make for a tasty and satisfying snack or dessert.

Peanut Butter Chocolate Chip Cookies

1/2 cup butter, softened
3/4 cup peanut butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 – 2 tablespoons milk, as needed
1 cup chocolate chips

Preheat oven to 350. Prepare two large baking sheets by spraying with cooking spray or lining with parchment. In a large bowl or the bowl of a stand mixer, cream together the butter, peanut butter, white sugar, and brown sugar until well blended. Add the egg and vanilla and mix until smooth. Add the flour, baking soda, and salt, and mix until blended. Add milk as needed if the dough is crumbly. The dough should be thick but should hold together well. Fold in the chocolate chips until well distributed. Scoop tablespoon sized scoops of dough onto the prepared baking sheets and mash down with a fork. Bake 10-12 minutes, or until lightly golden around the bottoms. Serve warm with cold milk!
