Easy Crumb Bars
Is there any more classic of a flavor combination than Peanut Butter and Jelly? I mean, this stuff has been around since the beginning of time, and kids and adults all LOVE it!
This recipe is an easy crumb bar filled with a delicious peanut butter and jelly center. I used Reese’s Peanut Butter Cups for the peanut butter filling with some strawberry jelly that was in our fridge. You could use any jelly or jam that you have on hand – so pick your favorite and let’s get started!
How to Make Crumb Bars –
You’ll start by making the crumb base and topping. This is a simple mixture of butter, sugar, an egg + flour and oats. Press half of this mixture into a backing pan.
Spread some jam or jelly on top –
Then, sprinkle some chopped peanut butter cups on top of the jam –
(Looks good already!)
Lastly, crumble the remaining dough over the top and then pop it into the oven!
Bake for 25 minutes and then cut into bars!

Ingredients
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1 egg yolk
- 1 cup flour
- 1 cup quick oats
- 1/2 cup jam
- 12 Reese's Peanut Butter Cups, coarsely chopped
Instructions
- Preheat oven to 350 degrees and grease the bottom of an 8x8 baking dish.
- Cream together the butter and sugar.
- Add the egg yolk and beat until creamy.
- Slowly add the flour and oats until crumbly.
- Press half the mixture into the bottom of your baking pan.
- Spread the jam over the dough in the pan.
- Top with the chopped peanut butter cups.
- Crumble the remaining dough over the top.
- Bake for 25-28 minutes.
- Cool completely before cutting into bars.
