The Best Lemon Cupcakes

I’m always on the hunt to find the best recipes.  I am constantly putting one recipe up against another in hopes of finding a clear winner!  I call it my own little version of cupcake wars.  Today I want to share the recipe for the best lemon cupcakes, {one of my very favorite cupcakes} that was found as a result of my little taste testing methods.

Step One:  Google some recipes for any particular topic.  I read reviews and go with ones that seem to be a hit!

Step Two:  Make them and pay close attention to all directions so you make it how they were intended to be made.

Step Three:  Have as many friends and neighbors that will volunteer for the calories, taste all trials and give you a fair vote.  In order to keep it fair, I always make the topping/frosting constant when I’m just looking for the best cake recipe.

You can see that the three I tried looked a little different. For this trial, the winner was this recipe (from Your Home Based Mom) and I added something of my own too.  This was the easiest recipe I tried and they were a big hit!

Lemon Cupcakes

1 pkg of (betty crocker) lemon cake mix

1 small pkg jello vanilla instant pudding

4 eggs

3/4 c water

3/4 c oil

1 c sour cream

zest of 1 lemon

juice of 1 lemon

Stir it up and evenly fill 24 cupcake papers. Bake at 350 until a toothpick comes out clean.  They will just barely be starting to brown in a couple spots.  My oven only took 15 minutes.  The key to moist cupcakes is not to over bake!  Of course you don’t want them under baked either so it’s a fine line.

These cupcakes are beautiful and perfectly domed!  And they have a strong lemon flavor!

I used this cream cheese frosting (from my baking addiction) recipe because it was already my favorite!

And then I added my secret sprinkles which are crushed up lemon heads.  A little dusting of this and it adds an even more awesome kick.  It almost looks like rock candy or course sanding sugar.  I’ve also added lemon heads to lemon cookies!

This is a really lemony treat!

I wrapped them up in my favorite clear boxes that show off these beauties!

I tied it with a strip of fabric instead of ribbon for a homey vibe.

Yes, I over-think every detail.  It’s how I roll.  :)

    All i could find at the store is betty crocket super moist lemon cake mix. It says it has pudding in the mix. Should i still add the instant pudding?? Thanks! Making these for easter!

      Oh no! I’m so sorry I didn’t get back to you before Easter! Did you make these cupcakes? Did you decide yes or no on the pudding? I’ve never noticed a cake mix that already has pudding in it, so I wouldn’t really know. I’m interested to see what you did and how they turned out!

    I used the BC lemon super moist with pudding added and my cupcakes all sank in the middle when I took them out of the oven. Never had that happen before so I’m assuming it was the extra pudding. The flavor was amazing though!!

    Made these tonight very tasty loved them.. Except my cupcakes sunk in and were flat any ideas of why they didn’t stay risen a bit?

    I just tried these using Duncan Hines Supreme Lemon Cake Mix because our grocery store didn’t have Betty Crocker Lemon Cake Mix. My cupcakes sank in the middle and had a very “crepe” like texture. Very rubbery. :( Not usable. I am wondering if it is the cake mix because I followed the directions to a tee. I will try it again with the specific cake mix you mentioned because it sounds so good. Hoping it will work out.

      I found this recipe on another site EXCEPT… It says to add 1/4 cup of flour OR THE CUPCAKES WILL FALL!!!! The flower is not necessary if making a cake but DETRIMENTAL if making cupcakes.

    The pictures of your cupcakes look delicious, but was quite disappointed when I saw Betty Crocker cake mix!!! What is this world coming to?? Can’t anyone be bothered to avoid preservatives and put a little effort into baking from scratch?? Its really not that hard

    I made these cupcakes today for a shower. Followed the direction exactly. Cupcakes all fell. They were rubbery and spongy. They werr not very flavorful either. I was extremely disappointed. I thought I did something wrong untill I started reading the reviews. I realized I wasn’t the only one with epic failed results!
    What is wrong ? Why can’t we get these beautiful domed shaped cup cakes?
