The dough for these chocolate sugar cookies is thick and soft and super easy to work with! It doesn’t need to chill in the fridge or freezer, and it has such a great texture.
Here’s how to make them:
How to Make Chocolate Sugar Cookies
These cookies are delicious by themselves, but adding frosting makes them simply AMAZING! The recipe for my favorite strawberry frosting (as seen in the images above) is listed below, but a Cream Cheese Frosting or a simple Buttercream also tastes fantastic!
Topped with a fresh sliced strawberry or cute sprinkles, these cookies are absolutely perfect for Valentine’s Day!
INGREDIENTS –
for the cookies:
- 1 cup butter, softened – I’ve used both salted and unsalted butter and I don’t notice a difference in these, so use what you have on hand.
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 3 teaspoons baking powder
- 1/2 teaspoon salt
for the frosting:
- 1 cup sliced strawberries, divided
- 1/2 cup butter softened
- 3 cups powdered/ confectioners sugar, more as needed
- 1/2 teaspoon vanilla
INSTRUCTIONS –
MAKE THE COOKIE DOUGH – In a large bowl or the bowl of a stand mixer, beat together the butter and sugar until light and fluffy. Add the eggs and vanilla and beat until smooth. Add the dry ingredients – flour, cocoa powder, baking powder, and salt, and mix until combined.
ROLL THE DOUGH – Roll the dough into golf ball-sized balls and place 1 1/2 inches apart on the prepared baking sheets lined with parchment paper or a silicone mat. Press down to flatten slightly. Feel free to size yours bigger or smaller, depending on how many cookies you would like to make.
BAKE – Bake for 9 – 10 minutes in the oven at 400 degrees, or until the cookies look dry on top and are just slightly browned on the bottoms. It’s important not to over-bake them, so the cookies will stay soft and tender.
COOL – Let them cool completely on a wire rack while you make the sweet strawberry frosting.
MAKE THE FROSTING – Purée half of the strawberries in a food processor or blender, until smooth. In a large bowl or the bowl of a stand mixer, beat the butter until light and fluffy. Add the powdered sugar, vanilla, and strawberry puree, and beat until smooth. Add additional powdered sugar as needed to make a spreadable frosting.
Using fresh strawberries in the frosting gives it an amazing flavor, and I love the little bright flecks of fruit. A sliced strawberry on top makes the cookies extra cute and gives them even more strawberry flavor.
TO STORE – Place in an air-tight container and store at room temperature.
