A Healthy Snack Option
When my kids get home from school, they drop their backpacks and head straight to the kitchen! (Anyone else have kids that come home starving?!) But just because your schedule get complicated during the school year doesn’t mean your snacking routine has to be!
Here’s a cute way to keep snack time simple while having fun – caterpillars made from grape tomatoes, mozzarella cheese, fresh spinach “antennae” and balsamic glaze faces! I call them “Easy Caprese Bites”, but my kids call them DELICIOUS!
How to Pronounce Caprese
I don’t think I learned how to say Caprese the right way until just a few years ago. It looks like Kuh-Preece to me! Now that I’m a sophisticated adult (ahem) I’ve learned that the English pronunciation can vary just slightly. Typically, the way Americans say it is “kuh-pray-sey” while people in England and Australia, will say “kah-pray-zee”.
How To Make Caprese Bites
These mini caprese bites are super easy to make and can be done in just a few minutes.
Leaf Bed & Caterpillar – Lay out the basil or spinach leaves on a plate to form a bed for your caterpillar. Next, alternate cherry tomatoes and mozzarella balls on the leaves in the shape of a caterpillar. You’ll want to start and end with a cherry tomato.
Add The Details – With a toothpick, poke two small holes in the top of the first tomato and then place two long stems from either the basil or spinach leaves to make the antennae. Lastly, you’ll want to dip your toothpick into the balsamic glaze to then draw the face on the caterpillar.
Serve – I love to serve this healthy little snack with a little side of the balsamic for dipping.

Caprese Bites Recipe
Ingredients
- 4 cherry tomatoes
- 3 mozzarella balls
- spinach or basil leaves
- balsamic glaze
Instructions
- On a small salad plate, arrange a bed of spinach or basil.
- Alternate placing a cherry tomato and a mozzarella ball in a caterpillar shape, starting and ending with a tomato.
- Using a toothpick, make 2 small holes on the top of the tomato "head". Place 2 long stems from your spinach or basil leaves inside the holes to resemble antennae.
- Dip one end of your toothpick into your balsamic glaze and dab it onto the face of your caterpillar to make eyes and a dotted smile.
- Serve with a small side of more balsamic glaze for dipping.
