Prep: Heat the oil in a skillet over medium-high heat. Pour the buttermilk in a bowl. In a separate shallow bowl, mix together the flour and breadcrumbs.
Cook the chicken: Dip each chicken breast into the breading mixture, pressing the flour mixture onto the chicken to adhere. Ensure the chicken is evenly coated, then place in the skillet. Fry until golden, about 5-6 minutes, then flip and cook the other side for 4-5 minutes, or until cooked through.
Add the Cheese: Place a slice of mozzarella on top of each breast, cover and cook for 1 minute to melt the cheese.
Make the Sauce: Mix the mayonnaise and pesto in a small bowl. Spread it evenly on the inside of both slices of bread
Build the Sandwich: Add 1 cutlet to each bun, then top with some spinach or arugula. Add the top half of the bun, and enjoy!
