Eggs in Toast

Preheat a small skillet to medium-high heat and spray with non-stick cooking spray.
Butter both sides of the slice of bread, then cut out the center with kitchen shears or a cookie cutter.
Crack 1 egg in a small bowl. Add a pinch of salt and pepper, to taste. Stir to scramble the yolk, then set aside.
Place the bread on the heated pan for 30 seconds - 1 min, until golden. Place the heart-shaped bread center on the side and toast it at the same time.
Flip the bread, then pour the egg into the middle of the bread slice without overfilling. (You may not use the whole egg.)
Cover with a lid and cook for 30 seconds to 1 min, or until the bread is browned on the underside and the egg is cooked to your liking. I like my eggs just a little runny, so I'll move the egg around with a fork to bring the uncooked top to the bottom so that it sets more evenly.
Repeat with the other bread slices + eggs.
You can serve it as-is, or you can sprinkle the toast with chopped parsley, avocado, cheese, and more salt and black pepper.
