Preheat the Grill:

  • Start by preheating your grill to medium-high heat (around 400°F or 200°C). Clean and oil the grates to prevent sticking.

Prepare the Chicken:

  • Pound the chicken to 1-inch thickness, then set aside.

Seasoning:

  • In a large bowl combine oil, Italian seasoning, salt and black pepper. Add the chicken and coat evenly.

Grill the Chicken:

  • Place the chicken breasts on the preheated grill and cook for about 6-8 minutes per side or until the internal temperature reaches 165°F (75°C). Cooking times may vary depending on the thickness of your chicken breasts, so use a meat thermometer to ensure they're cooked through.

Prepare the Bruschetta Topping:

  • While the chicken is grilling, prepare the bruschetta topping. In a bowl, combine all the bruschetta ingredients. Mix everything together, and let it marinate while the chicken finishes cooking.

Top the Chicken:

  • Once the chicken is cooked through and has those beautiful grill marks, top each breast with a slice of mozzarella cheese, then cook for 1-2 minutes until the cheese is melted.
