Add all ingredients for chicken in a medium bowl and let marinate while you prep everything else.
Add the chipotle chili powder to the sour cream and thoroughly combine. Set aside.
Spread tortillas with refried beans and top with shredded cheese. (You can place this under a broiler for about 30 seconds if you want it melted and warmer.)
Layer each tortilla with chicken, lettuce, tomatoes, bell pepper, cheese, avocado and a dollop of chipotle sour cream.
Serve immediately and enjoy!
