Italian Dressing Chicken

This 3-ingredient crispy baked Italian dressing chicken is not only delicious, but it is also super easy to make! Marinated in Italian dressing, this simple chicken recipe is bursting with flavor!

Ingredients

  • 1 lb boneless, skinless chicken breast cutlets
  • 1 cup Italian dressing
  • 1 cup instant potato flakes
  • fresh parsley flakes for garnish optional

Instructions

  • Preheat your oven to 350. Pour a bit of the Italian dressing into the bottom of a 13x9 casserole pan so that the entire bottom is coated. Pour the remaining dressing onto a large plate, and pour the mashed potato flakes onto a separate plate.
  • One at a time, coat each cutlet with the Italian dressing, then roll it into the potato flakes. Place the chicken into the prepared baking dish, and repeat with the remaining chicken pieces.
  • Bake for 25-30 minutes or until the temperature of the chicken reaches 165 degrees F.
  • Turn your oven to broil and let the potato flaskes crisp up and turn golden. This will only take a couple of minutes - watch it carefully so it doesn't burn!
  • Serve and enjoy!

Notes

Optional: Marinate your chicken in the Italian dressing. I usually take the chicken out of the freezer in the morning and just place it in a casserole dish filled with dressing. This way it defrosts and marinates at the same time.
