  • On a small salad plate, arrange a bed of spinach or basil.
  • Alternate placing a cherry tomato and a mozzarella ball in a caterpillar shape, starting and ending with a tomato.
  • Using a toothpick, make 2 small holes on the top of the tomato "head". Place 2 long stems from your spinach or basil leaves inside the holes to resemble antennae.
  • Dip one end of your toothpick into your balsamic glaze and dab it onto the face of your caterpillar to make eyes and a dotted smile.
  • Serve with a small side of more balsamic glaze for dipping.
