Ingredients

  • 1/2 pound bacon slices 10-12 slices
  • 1/2 cup brown sugar
  • dark chocolate boxed brownie mix + ingredients on back of box or homemade recipe

Instructions

  • Preheat the oven to 350°. Spray a 13x9" baking pan with cooking spray, or line the pan with parchment paper.
  • Make the Candied Bacon. Place 5-6 strips of bacon on a frying pan or skillet over medium heat. Rub the top side with brown sugar and cook for 2 minutes, or until sugar is melted. Flip the bacon, then rub more brown sugar over the backside and cook for 2 more minutes, or until sugar is melted. Continue cooking until crispy, another minute or so, flipping as needed.

  • Remove from heat to cool, and repeat the process with the remaining pieces of bacon. I like to let my bacon cool on a baking sheet lined with brown paper bags. DO NOT PUT THE BACON ON NAPKINS OR PAPER TOWELS - the sticky sugar will stick to the paper towels and it's hard to separate.

  • Meanwhile, make the brownie mix according to package directions. Set aside.
  • Once the bacon has cooled, chop it into 1/2-inch pieces.

  • Add half of the bacon to the brownie batter, then pour the batter into the prepared pan.

  • Sprinkle the remaining bacon pieces on top of the batter.
  • Bake according to your brownie box directions, (usually 28-30 minutes) or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and cool in the pan, on a wire rack, for five minutes.

  • Cut the brownies into squares and serve them warm or at room temperature with a glass of milk or a scoop of vanilla ice cream!
