Cherry Strudel

Preheat the oven to 400 degrees and line a large baking tray with a silicone mat or parchment paper..
Place one sheet of filo pastry onto the baking sheet, longest edge facing you, then brush lightly with melted butter. Lay the next sheet on top, then brush lightly with butter. Repeat until you have layered all 5 sheets of filo pastry. On your final sheet of pastry, brush lightly with butter again.
Place the cherry pie filling in the center third of the pastry dough. Be sure to leave a one-inch gap at the short ends.
Take the empty dough nearest you and gently fold over the cherry pie filling.
Fold the other side of the empty pastry dough over the top.
Fold the ends underneath the strudel, then beat the egg in a small dish and brush the egg over the top of the dough.
Make a few slits in the dough with a sharp knife to allow the steam to exit while it's baking.
Place the cherry strudel in the oven and bake it for about 15-20 minutes. The dough should be golden and crisp and the filling should be bubbling.
Let the strudel cool before slicing it into 8 pieces and enjoying. You can dust your strudel with powdered sugar to make it even prettier, but this is totally optional.
You can either serve at room temperature or reheat for 1 minute in the microwave. It's also lovely with ice cream!
