Ingredients

  • 3 cups chicken chopped & cooked
  • 1/2 cup mayonnaise
  • 2 tablespoons pesto
  • 1 tablespoon parmesan cheese grated
  • 4 slices of bread whole wheat
  • 1 tomato medium & sliced
  • 2 cups baby spinach

Instructions

  • In a medium bowl, mix together the chicken, mayonnaise, pesto, and parmesan cheese, until combined.
  • To assemble the sandwiches, scoop 3/4 cup of chicken onto the buns, then top with tomato slices and baby spinach.
