- 4 cups spring mix
- 1 large cooked chicken breast cut into strips
- 1 cup strawberries sliced thinly
- 1/4 cup chopped celery
- 1/4 cup toasted almonds
- 1/4 cup crumbled gorgonzola
- Salad dressing - I used a Strawberry Vinaigrette
Assemble the salad by layering the spring mix, chicken breast, strawberries, celery, almonds, and gorgonzola.
Top with balsamic dressing and enjoy!
The salad can be prepared up to 24 hours in advance, with dressing added just before serving.
