Turkey Corn Chowder Recipe

- 2 cup chopped peppers divided
- 1 cup chopped onions
- 1/4 cup butter
- 8 ounces cream cheese
- 4 cups shredded turkey
- 2 cans cream style corn
- 4 cups turkey broth
- 1 1/2 cups milk divided
- 1/4 cup corn starch
Warm a large pot over medium heat.
Add the butter and stir until it melts.
Add the onions and 1 of the 2 cup of the red peppers.
Stir for about 4 minutes, or until the onions are softened.
Add the cream cheese and stir until the cream cheese has melted.
Stir in the turkey, broth and 1 cup of milk.
In a separate small bowl whisk together the cornstarch and 1/2 cup milk until smooth.
Once the soup is simmering, stir in the cornstarch mixture and continue to stir until the soup has thickened.
Simmer for 5 minutes.
Serve with the remaining chopped peppers sprinkled on top of the soup.
