  • 2 1/2 cups O Organics old fashioned oats
  • 1/2 cup O Organics banana chips lightly chopped
  • 1/4 teaspoon salt
  • 1/2 cup O Organics crunchy peanut butter
  • 1/3 cup O Organics pure maple syrup
  • 1/4 cup O Organics coconut oil
  • 1 teaspoon vanilla
  1. Preheat the oven to 325. Line a baking sheet with parchment or foil, and set aside. In a large bowl, mix together the oats, banana chips, and salt.
  2. In a medium sauce pan, stir together the peanut butter, maple syrup, coconut oil, and vanilla. Heat over medium heat, stirring frequently, until the mixture is smooth.
  3. Pour the peanut butter mixture over the oat mixture and toss to combine. Spread in an even layer on the prepared baking sheet.
  4. Bake 20-25 minutes, stirring halfway through, until golden brown. Allow to cool completely, then store in an airtight container.
