Gluten-Free Chocolate Chip Cookies

  • 2  2/3 cups almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1/2 c. pure maple syrup
  • 2 eggs
  • 1/4 cup coconut oil
  • 1 cup mini chocolate chips


  • Preheat your oven to 375 degrees F. and line a baking sheet with parchment paper or a nonstick baking mat.
  • In a large bowl mix together the almond flour, baking soda, and salt.
  • In a separate bowl combine the eggs, maple syrup, and vanilla.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Melt the coconut oil in a microwave-safe bowl and slowly add it to the batter.
  • Mix until the oil is incorporated.
  • Add the chocolate chips and stir until combined.
  • Using a cookie scoop, place the dough on your prepared baking sheet making three columns of four.
  • Bake cookies 8-9 minutes or until they are barely browning on the edges.
  • Cool, serve, and enjoy!


The cookies should be barely browning around the edges when you take them out of the oven and they will still be slightly underdone. As they cool they will become soft cake-like chocolate chip cookies.
