This Caprese sandwich recipe is a simple and delicious lunch idea.  Loaded  with fresh basil, tomatoes, and mozzarella this sandwich is so good you'll want to eat it every day!

  • 1 small baguette ends removed, cut in half
  • 2 tablespoons fresh pesto
  • 2 tomatoes cored and sliced thinly
  • 3-4 ounces fresh mozzarella sliced thinly
  • fresh basil leaves
  • 1 tbsp balsamic vinegar
  • spring mix salad
  • 1 tbsp olive oil
  1. Slice each half of the baguette in half horizontally and spread both sides with pesto.
  2. On one side, layer alternating slices of tomatoes and fresh mozzarella.
  3. Top with fresh basil leaves and drizzle with olive oil and balsamic vinegar, then add the spring mix to the top.
