Pumpkin Chocolate Chip Cookies Recipe
These pumpkin chocolate chip cookies are a wonderful taste of fall. With the perfect amount of pumpkin spice and chocolate chips, these soft and delicious cookies will quickly become one of your favorite cookie recipes!
Servings: 1 Dozen
- 2 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup butter softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 cup canned pumpkin
- 12 ounces chocolate chips I used semi-sweet
Preheat oven to 350. Line cookie sheets with a Silpat or parchment paper. Set aside.
In a medium bowl, combine flours, baking soda, pumpkin pie spice and salt. Set aside.
In the bowl of an electric mixer, beat butter on medium to high speed for about 30 seconds. Add sugars and beat until combined, scraping down the sides of the bowl occasionally. Add eggs, 1 at a time, beating well after each addition. Beat in pumpkin and vanilla until combined. Next, add if flour mixture until combined. Stir in the chocolate chips.
Drop dough by 2-tablespoons on your prepared cookie sheets, approximately 2 inches apart. Bake for 10 to 12 minutes or until edges are light brown. Cool on cookie sheets for 2 minutes, then remove to wire racks to cool completely.
