  • 2 tablespoons vegetable oil
  • 1 cup instant rice
  • 1 onion chopped
  • 2 bell peppers any color, chopped
  • 2 teaspoons mustard
  • 1 teaspoon salt
  • 14.5 oz petite diced tomatoes 1 can
  • 5.5 oz V8 tomato juice 1 can


  • In a large saucepan over medium heat combine the oil, the rice, the onion, the red bell pepper and the green bell pepper.
  • Saute until onions are translucent.
  • Stir in mustard, salt, tomatoes and tomato juice
  • Let simmer for 5 minutes.
