Mashed potatoes made with cream cheese are a delicious side dish that can go with many of your favorite dinners.

  • 2 lbs of red potatoes quartered
  • 1-2 large garlic cloves finely chopped
  • 1 cup ricotta cheese
  • 4 ounces cream cheese cubed
  • 1/2 cup shredded Parmesan cheese
  • Salt & pepper to taste
  • Rosemary or parsley
  1. Wash and scrub your potatoes before cooking them

  2. In a large pot of water bring the potatoes to a boil and then lower the heat to a simmer on the stove.  Simmer until they are tender - about 10-20 minutes.

  3. Drain and return them to the pot.
  4. Place the pot on medium heat for about a minute to dry out the potatoes.
  5. Remove from heat.
  6. Add the garlic, ricotta cheese, cream cheese, and Parmesan cheese.
  7. Mash well.
  8. Add salt & pepper to your liking, mix again.
  9. Garnish with green onions or fresh rosemary, optional
