Chicken Quinoa Caprese Salad Recipe

  • 2 cups of cooked quinoa - cooled 2/3 uncooked
  • 2 cup of chicken cooked and shredded or cubed
  • 8 oz fresh mozzarella balls (about 2 cups) cut in half
  • 2 cups cherry tomatoes cut in half
  • 1/4 - 1/2 cup fresh basil chopped
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • salt and pepper to taste


  • In a large bowl, add the quinoa, chicken, tomatoes, basil and mozzarella. Mix to combine.
  • In a separate bowl, mix the oil and vinegar until well combined, then pour over the quinoa mixture. Toss gently to evenly coat.
  • You can sprinkle the salad with salt and pepper if you'd like to, or eat it as is!


Quinoa cooks quickly, in about 8 minutes, but for this recipe you will want your quinoa to be cooled completely. Plan to let it cool in the refrigerator for at least an hour after cooking.
The easiest way to make this salad is to start with some rotisserie chicken breasts that are chopped or shredded. If you don't have any, you can grill 2 boneless, skinless chicken breasts in olive oil for a few minutes.
