Heat the oil in a medium non-stick skillet over medium-low heat.
In a small bowl, whisk the eggs, milk, salt and pepper.
Pour the egg mixture in the pan and cook undisturbed until the edges are set, about 1 minute.
Continue cooking until the egg is fully set (about 3-4 minutes) , occasionally lifting the edges with a rubber spatula so the uncooked egg runs underneath.
Place the 2 slices of cheese in the center of the egg, then gently lift each side of the egg and fold it over the cheese to form a square about the size of your toasted bread. Flip the egg and cheese and allow the folded side to cook for about 30 seconds, or until the cheese is melted.
Build your sandwich by adding the bacon on 1 slice of toast and then the warm eggs. Top with the last slice of toast and serve warm.
