Scrambled Egg Sandwiches

The scrambled egg sandwich is a classic breakfast delight that's as comforting as it is simple. Perfect for a crazy, or LAZY morning!

  • Heat the oil in a medium non-stick skillet over medium-low heat.
  • In a small bowl, whisk the eggs, milk, salt and pepper.
  • Pour the egg mixture in the pan and cook undisturbed until the edges are set, about 1 minute.
  • Continue cooking until the egg is fully set (about 3-4 minutes) , occasionally lifting the edges with a rubber spatula so the uncooked egg runs underneath.
  • Place the 2 slices of cheese in the center of the egg, then gently lift each side of the egg and fold it over the cheese to form a square about the size of your toasted bread. Flip the egg and cheese and allow the folded side to cook for about 30 seconds, or until the cheese is melted.
  • Build your sandwich by adding the bacon on 1 slice of toast and then the warm eggs. Top with the last slice of toast and serve warm.
