Putting together a breakfast sandwich may seem like a no-brainer, and while it almost is, you can’t deny that there’s a science to perfectly cooked eggs, crispy bacon, and the filling-to-bread ratio. Who knew a scrambled egg breakfast sandwich was such serious business?!
It’s not, I’m totally kidding.
This simple sandwich is made with cheesy eggs, smoky bacon, and lightly toasted white bread and can be customized with all the toppings you want! It’s a great way to get tons of protein into your kids before school, and because it’s meant to be hand-held, it can be eaten on the go!

Ingredients Needed
This recipe for scrambled egg sandwiches is a single serving. Double, triple, or more, to suit however many sandwiches you need to make.
- Eggs: You’ll need 2 large eggs.
- Milk: Adding eggs to milk makes them thicker and fluffier.
- Salt and pepper: To taste.
- Cheddar cheese: I use slices of cheddar cheese because it’s easy, but if you have a block of cheese, feel free to grate it and use that.
- Cooked bacon: I’ve found the best way to cook bacon with even crispness and no splatter!
- Toasted white bread: Toast it as light or as dark as you prefer.
Make It Your Own
- Bread: Swap the white bread with your favorite. Whole wheat bread, sourdough, rye, a toasted brioche bun or English muffin, bagels, a croissant, or take a cue from my breakfast wrap recipe and use a tortilla shell instead.
- Eggs: If you prefer them truly scrambled, you can scramble them instead. You can also do a couple of fried eggs and melt the cheese on top.
- Cheese: There are plenty of types of cheese that pair well with eggs. Swiss cheese, gruyere, Parmesan, goat cheese, feta, or even Colby Jack or Monterey Jack for a bit of a kick.
- Bacon: For a vegetarian sandwich, you could completely skip the bacon, or if you’d prefer to use ham, a sausage patty, or sliced deli meat instead, you could do that.
- Fun toppings: Think slices of juicy tomato, creamy avocado, spinach (or your favorite veggies), mayonnaise, sriracha, or whatever hot sauce you have on hand. Or combine the two for a spicy mayo.
- Extra flavor. Add a little extra seasoning to your eggs. Everything bagel seasoning is always a tasty addition. Or for a kick, diced jalapenos. You could also sprinkle the eggs with chives for a fresh herb finish.
How to Make this Scrambled Egg Sandwich Recipe
- Cook the eggs. Heat oil in a medium non-stick skillet over medium-low heat. Whisk together the eggs, milk, salt, and pepper and pour it into the pan. Leave it to cook undisturbed until the edges are set. This should be about a minute.
- Add the cheese. Continue cooking the eggs, but this time start to gently lift the edges and swirl the pan if necessary to get any uncooked eggs to run underneath. Then, add the 2 slices of cheese on top in the center of the eggs.
- Fold the eggs. Use your spatula to lift one side of the eggs and fold it over the cheese. Do this with the opposing side, and then again with the remaining two. It should look like a square pocket the size of your toast. Flip it over and cook the folded side for about 30 seconds.
- Assemble the sandwich. Top one slice of bread with crispy bacon and then place the egg on top. Place the top piece of toast over the egg and serve while it’s fresh!
Recipe Tips
- It’s best served right away. If you’re looking for the best make-ahead breakfast sandwiches, I’ve got just the thing!
- Run out of milk? No problem at all. The milk in the eggs is a bonus but not at all necessary for the success of this recipe.
- Keep them warm. If you’re making sandwiches for a crew, keep the eggs warm in the oven on low heat along with the bacon. Then, when everyone is up and at ’em and ready to eat, you can assemble them.
Recipe FAQs
I’m partial to a refreshing smoothie myself! An easy peach smoothie or tropical banana smoothie would both be great. You could also enjoy it with a cup of tea or coffee if that’s your usual morning beverage.
If you want to take your eggs one step further and get them to form small curds, then once you start lifting the edges, you start dragging them to the middle of the pan, repeatedly, breaking up the eggs as you go.
They won’t harm you, but you’ll notice the texture is quite dry and possibly rubbery. Either learn for next time or start over from scratch.

Scrambled Egg Sandwiches
Ingredients
- 2 eggs
- 2 tablespoons milk
- salt and pepper, to taste
- 1 teaspoon olive oil
- 2 slices Cheddar cheese
- 2 slices cooked bacon
- 2 slices toasted white bread
Instructions
- Heat the oil in a medium non-stick skillet over medium-low heat.
- In a small bowl, whisk the eggs, milk, salt and pepper.
- Pour the egg mixture in the pan and cook undisturbed until the edges are set, about 1 minute.
- Continue cooking until the egg is fully set (about 3-4 minutes) , occasionally lifting the edges with a rubber spatula so the uncooked egg runs underneath.
- Place the 2 slices of cheese in the center of the egg, then gently lift each side of the egg and fold it over the cheese to form a square about the size of your toasted bread. Flip the egg and cheese and allow the folded side to cook for about 30 seconds, or until the cheese is melted.
- Build your sandwich by adding the bacon on 1 slice of toast and then the warm eggs. Top with the last slice of toast and serve warm.
