Ingredients
  • 1/2 tablespoon olive oil
  • 1/2 onion diced small
  • 2 cloves garlic minced
  • 1/2 green pepper diced
  • 1/2 pound ground beef
  • 1 15 ounce can tomato sauce
  • 1 tablespoon tomato paste
  • 1/2 cup frozen corn
  • 1/2 teaspoon salt plus more to taste if needed
  • 1/8 teaspoon black pepper plus more to taste if needed
  • pinch of red pepper flakes optional
  • 2 tablespoons minced fresh basil
  • cooked pasta for serving
Instructions
  1. Heat oil in a large saucepan over medium high heat. Add the onion and cook, stirring occasionally, for about 3 minutes or until the onion starts to soften.
  2. Next, add the diced green pepper and cook for about 3 minutes.
  3. Add the garlic and sauté for 1 minute longer, stirring constantly.
  4. Add the ground beef to the pan. Brown until the meat is almost fully cooked (about 5-8 minutes).
  5. Add the tomato sauce, tomato paste, salt, pepper, red pepper flakes, and frozen corn. Bring to a low boil, then reduce to a simmer over low heat. Cover and let sauce simmer for 10 minutes, stirring at the 5 minute mark. At the very last minute, stir in the fresh basil.
  6. Serve hot goulash over the cooked pasta. (You could also serve it over baked potatoes or mashed potatoes.)
