- 4 cups frozen potatoes O’Brien with onions and peppers you can use regular frozen potatoes if you don't like the onions and peppers
- 2 cups cooked ham cut into bite size cubes
- 1 cup shredded cheese any variety. I love Colby-Monterey Jack blend
- 1 10 3/4 oz can cream of chicken soup
- 1/2 cup sour cream
- extra cheese for sprinkling on top optional
Heat oven to 375°F. Spray an 8-inch square casserole dish with non-stick spray.
Mix all ingredients together in a large bowl, coating the ham and potatoes evenly.
Spread the ham and potatoes into your baking dish.
Bake for 45-50 minutes or until hot and melty.
Let stand 5 minutes before serving.
