Beef Tostadas

Ingredients

  • 2 Tbsp olive oil
  • 1/2 cup chopped red onion
  • 1 Tbsp minced garlic
  • 1 pound ground beef
  • 1 packet taco seasoning + water mentioned on the back of the packet
  • 1 15 oz can refried beans
  • ¼ cup sour cream
  • 1-2 Tbsp water
  • 8 corn tostada shells

For serving: (as desired)

Instructions

  • Heat olive oil in a large non-stick skillet over medium-high heat.
    Directions to make Beef Tostadas
  • Saute red onion until softened (about 5 minutes.)
  • Add the garlic and saute for 1 minute.
  • Add beef and cook, breaking up the meat until browned, about 5 minutes.
  • Add the taco seasoning and water, and simmer according to package directions. Drain, if necessary.
  • Meanwhile, heat the refried beans in a small saucepan over medium-high heat.
  • Thin the sour cream to make it easier to drizzle by adding 1-2 tablespoons of water.
  • To serve, spread a layer of beans on the tostada shells, then top with beef and desired toppings.
