Frito Pie

This Frito Pie is the ultimate comfort food that’s fast, flavorful, and perfect for any occasion.

Ingredients

  • 2 pounds ground beef
  • 1 1 oz package taco seasoning
  • 1 cup water
  • 1 10 oz can diced tomatoes with green chilies undrained
  • 1 8 oz can tomato sauce
  • 1 cup corn canned, drained
  • 1 15 ze can black beans rinsed and drained
  • 1 cup cheddar cheese shredded
  • 2 cups Fritos Corn Chips divided
  • Optional toppings: diced green onion sliced olives, sliced jalapenos, chopped cilantro, diced tomato, salsa, sour cream, guacamole, shredded cheese, etc.

Instructions

  • Preheat the oven to 350 degrees. Spray a 9x13-inch casserole dish with nonstick cooking spray.

  • Add ground beef to a large skillet and cook until meat is browned.
  • Add taco seasoning and water to the skillet and bring to a boil. Reduce heat and simmer until thickened, about 5 minutes.
  • Stir in diced tomatoes, tomato sauce, corn and black beans. Let it simmer for 5 minutes then remove from heat and set aside.
  • Sprinkle half the Fritos in the bottom of the prepared dish, then spoon ground beef mixture on top, and then sprinkle with cheese.
  • Bake for 20 minutes or until the cheese is melted. Remove the dish from the oven and top with remaining Fritos and all other desired toppings.
