Hawaiian Pulled Pork Sandwiches

Hawaiian pulled pork sandwiches are made by cooking a delicious pork shoulder smothered in brown sugar and BBQ sauce low and slow in the crockpot until fall-apart tender. Then, we use the meat to pile high on Hawaiian rolls topped with a slice of pineapple, Swiss cheese, and crunchy fried onions to make the BEST pulled pork sammies!

Ingredients

  • 3 pound pork shoulder or butt roast
  • ½ cup brown sugar plus 2 Tablespoons for rub
  • 1 20 oz can pineapple rings
  • 2 teaspoons liquid smoke
  • 1 cup BBQ Sauce
  • 16 Hawaiian rolls
  • 4 slices of Swiss cheese quartered
  • 1-2 cups French Fried Onions

Instructions

  • Rub 2 tablespoons of brown sugar on all sides of the roast, then set the roast in a slow cooker.
  • In a medium bowl, mix together remaining brown sugar, juice from the can of pineapple, liquid smoke, and BBQ sauce. Pour on top of the roast. Cook on low for 8-10 hours or high for 5-6 hours.
  • Pull the roast from the slow cooker and shred it using 2 forks. Place it back into the slow cooker to absorb more juices.
  • Build your sandwich by cutting each roll in half, the adding a slice of cheese, a heaping spoonful of pork, a pineapple ring (cut to size, if needed) and a sprinkle of fried onions.
