This delicious chicken parmesan casserole has all the flavors of chicken parmesan, and it is so easy to make. The perfect dinner for a busy weeknight!

  • 1/2 pound rotini pasta uncooked
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 3/4 cup chicken broth
  • 1 14.5 ounce can diced tomatoes
  • 1 14.5 ounce can tomato sauce
  • 1 tablespoon tomato paste
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 2 teaspoons dried basil
  • 2 cups shredded rotisserie chicken
  • 6 slices provolone cheese
  • 2 tablespoons butter
  • 2 tablespoons grated parmesan cheese
  • 1/2 cup bread crumbs
  1. Preheat the oven to 350. Cook the pasta according to the package directions, then drain.
  2. While the pasta is cooking, in a large skillet, heat the olive oil over medium heat. Add the garlic and cook 1-2 minutes, or until fragrant. Add the chicken broth, diced tomatoes, tomato sauce, and tomato paste, and mix to combine. Add the sugar, salt, and basil, and stir to combine.
  3. Simmer the sauce for 15-20 minutes, until slightly thickened. Stir in the rotisserie chicken. Add the cooked pasta to the skillet, and stir to combine. Pour the pasta into a 9 x 9 baking dish. Top with the slices of provolone cheese.
  4. In a small microwave safe bowl, melt the butter. Stir in the parmesan and bread crumbs. Sprinkle the bread crumb mixture over the top of the pasta. Bake 20-25 minutes, or until the bread crumbs are golden.
