Baked Chicken and Broccoli Casserole

This cheesy chicken broccoli casserole is the perfect recipe for a chaotic night.  Made with pasta, tender chicken, broccoli and loads of delicious cheese, this casserole will quickly become one of your family's favorite dinners!

Ingredients
  • 16 oz Pasta noodles of your choice
  • 14 oz Frozen broccoli florets
  • 2 1/2 cups Cooked chicken cubed
  • 14.5 oz Chicken broth
  • 8 oz Cream Cheese cubed and divided
  • 2 cup Shredded Mozzarella cheese divided
  • 2 Tbsp. Grated Parmesan Cheese
  • 1/4 cup Bread crumbs optional
  • Dried basil optional
Instructions
  1. Heat oven to 375 degrees F

  2. Spray a 9 x 13 baking dish with non-stick cooking spray

  3. In large pot over high heat, cook pasta according to package directions, adding the broccoli to the boiling water for the last 3 min

  4. Drain and return to stove top

  5. Add chicken and chicken broth to the pot and simmer for 3 min

  6. Add 1/2 of the cream cheese
  7. Cook an additional 2 minutes or until cream cheese has melted

  8. Stir in 1 cup mozzarella and remove from heat

  9. Spoon into baking dish and add the remaining cubes of cream cheese scattered about the dish

  10. Cover with foil and bake for 10 minutes

  11. Sprinkle with remaining cheeses and bread crumbs

  12. Bake uncovered for 3 additional minutes or until the cheese has melted

  13. Let stand 5 minutes to thicken

  14. Sprinkle with dried basil then serve and enjoy!
