Preheat skillet or pan to medium/ high heat (about 350 degrees)
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate smaller bowl, mix together the eggs, milk and 2 Tbsp of olive oil.
Add the wet ingredients to the dry ingredients and stir just until moistened. *Don’t over mix, the batter will be lumpy.
Add a drizzle of oil to the skillet to evenly coat.
Drop about 1/4 cup rounds of batter on the skillet, then add 3-4 chocolate chips to each pancake. Let them cook until bubbles begin to form and pop in the center. Flip, and cook until golden. Repeat with remaining batter.
To serve, drizzle with syrup and sprinkle with more chocolate chips.
