Valentine’s Day is the perfect time to show a little extra love, and what better way to do that than with homemade Chocolate-Covered Strawberry Heart Pops?

Ingredients

  • 12 medium-sized strawberries smaller strawberries adhere better to the stick than the larger ones.
  • 1 cup Ghirardelli milk chocolate melting wafers more, if needed
  • 1 cube white chocolate bark more, if needed
  • 12 Sucker sticks

Instructions

  • Prep the Strawberries - Wash the strawberries and dry them thoroughly. Dry strawberries are the key to perfectly dipped berries! Using a sharp paring knife, remove the leaves and cut a V-shape into the top of each berry. Gently round out the edges to form a heart shape, but be careful not to remove too much.

  • Add a Lollipop Stick - Insert a lollipop stick through the bottom of each berry.
  • Dip the Strawberries - Melt the Ghirardelli wafers according to the package directions. Stir until smooth. Blot the strawberries again with a paper towel to remove any remaining moisture, then dip one at a time into the melted chocolate. Gently tap the stick against the rim of the bowl to remove any excess chocolate. Allow the dipped strawberries to harden.
  • Add the Decorative Drizzle - Melt vanilla almond bark according to the package directions. Lay the heart pops on a baking sheet lined with a silicone mat. Drizzle over the heart pops with a spoon. Let dry completely before serving.

Notes

Using high-quality melting chocolate (like Ghirardelli) makes a huge difference. Some recipes call for milk chocolate bark, but I’ve found that it makes the strawberries too heavy and doesn’t set as nicely.
Keep them cold: It’s easiest to dip the strawberries when they are chilled straight from the fridge. Warmer strawberries become too soft and difficult to dip.
Make them the same day: Because the strawberries are cut, they release moisture over time, which can cause the chocolate to crack or weep. For the best texture and taste, enjoy them fresh!
Blot, blot, blot: Moisture is the enemy of chocolate-dipped berries! Make sure to blot the strawberries multiple times before dipping to ensure the chocolate adheres properly.
