French Toast Roll-Ups

French toast rollups are golden brown on the outside and filled with a warm and gooey cream cheese and sweet strawberry filling. Everyone loves this twist on the classic French toast, whether plain or finished with a dusting of powdered sugar and a drizzle of maple syrup!

  • Whisk the eggs, milk, vanilla, and cinnamon in a bowl until combined. Set aside.

  • Flatten each slice of bread with a rolling pin. Cut off all the crust.
  • Spread 1 teaspoon of cream cheese in a line along the bottom of a slice of bread. Top with chopped strawberries (about 1 tbsp) , being careful not to overfill it so you can roll the bread up easily.
  • Starting at the edge with the strawberries, roll the bread into a tight log. Repeat with remaining bread slices
  • Dip each roll into the egg mixture, coating all sides.
  • In a large skillet over medium heat, cook each roll until all 4 sides are golden brown, about one minute per side.
  • Sprinkle it with powdered sugar, and serve with maple syrup for dipping.
