Herb Butter Salmon Foil Dinners

Ingredients

  • 4 boneless skinless salmon filets
  • salt and pepper to taste
  • 4 cups of fresh vegetables broccoli, carrots, cauliflower, zucchini, etc. NOTE: Vegetables like carrots and potatoes need to be very thinly sliced, otherwise they won’t soften very well in the oven.
  • 3 lemons divided
  • 1/2 cup butter softened, not melted
  • 1 tablespoon Italian seasoning
  • 1 tablespoon minced garlic
  • parsley optional for garnish

Instructions

  • Preheat the oven to 400 degrees. Cut 4 pieces of foil to be 12x12”.

  • Slice 2 lemons into thin slices and place about 3-4 lemon slices in the center of each sheet of foil.
  • Season both sides of the salmon filets with salt and pepper, and place directly on top of the lemon slices.
  • Arrange 1 cup of vegetables around each salmon filet.
  • In a small bowl mix the butter, Italian seasoning, and garlic. Spoon the herb butter over the top of the salmon and the vegetables..
  • Fold up the sides of the foil, being sure the ends are sealed so the juices and butter don’t spill out.
  • Place the foil packets on a baking sheet, then bake in the oven for 15- 20 minutes, or until the vegetables are tender.
  • Meanwhile, cut the last lemon into wedges and set aside.
  • Squeeze lemon juice over the top of each salmon filet and serve.
