Preheat an electric griddle or use a large skillet over the stove. Slice the zucchini bread into 1/2 inch slices.
In a shallow bowl whisk/ beat the eggs, then add the milk and vanilla and stir until combined.
Grease your pan or skillet with butter, then dip the zucchini bread slices one at a time into the egg mixture.
Place the bread slices on the griddle or heated pan and cook until the bottom is golden brown. Flip with a spatula and cook the other side.
