  • Warm a large pot over medium heat.

  • Add the butter and stir until it melts.
  • Add the onions and 1 of the 2 cup of the red bell peppers.
  • Stir for about 4 minutes, or until the onions are softened.
  • Add the cream cheese and stir until the cream cheese has melted.
  • Stir in the turkey, broth and 1 cup of milk.
  • In a separate small bowl whisk together the cornstarch and 1/2 cup milk until smooth.
  • Once the soup is simmering, stir in the cornstarch mixture and continue to stir until the soup has thickened.
  • Simmer for 5 minutes.
  • Serve with the remaining chopped peppers sprinkled on top of the soup.
