These bright and colorful Jello cookies are such a fun way to get the kids involved in the kitchen, and they’re easy to make too! Using Jello mix and a few simple ingredients you probably already have in your kitchen, these cookies will be ready in no time.
Cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Mix in vanilla. Add the flour, salt, and baking soda, and mix until combined.
Divide the dough into four equal parts and add jello mix to each portion. Add
3-4 drops of food coloring to each bowl and mix until color is evenly distributed. .
Place the remaining sugar in a small bowl. Roll the dough into one-inch balls, then roll each ball in the sugar. Place onto prepared baking sheets and flatten with a glass.
Bake 8-10 minutes until the cookies are just slightly browned on bottom and the tops look dry.
Let cool 5 minutes on the pan before transferring to a cooling rack.
