Kickin’ Chicken Cups- An Easy Appetizer

How good do those look? I’ve been trying to make a conscious effort to feed my family healthier foods, both at meal times as well as for afternoon snacks. So I made these for my kid’s this afternoon when they got home from school and I think I may have won “Mom of the Year” award! These Kickin’ Chicken Cups are an easy appetizer to prepare and they taste delicious. Here is the recipe:

Kickin’ Chicken Cups, serves 8

  • 1 cup Avocado, mashed
  • 1 cup Salsa
  • 1 pkg. Tortilla scoops
  • 1/2 lb Oven Roasted Chicken Breast, thinly sliced
  • Dried Parsley Flakes (optional)

  1. Layer scoop chips on a tray.
  2. Place chicken inside each scoop chip
  3. Add a dab of avocado and salsa on top of chicken.
  4. Sprinkle with Parsley, if desired.

Total prep and cook time: 5 minutes
