How To Make Chicken Sandwiches
INGREDIENTS –
- ½ cup olive oil or canola oil
- 1 cup buttermilk
- ½ cup all-purpose flour
- ½ cup breadcrumbs, plain or Italian
- 2 chicken breasts, pounded thin and cut in half to make 4 thin breasts
- 4 slices mozzarella
- ¼ cup mayonnaise
- 2 tablespoons pesto
- 4 sandwich buns
- ½ cup arugula or chopped romaine
INSTRUCTIONS –
1. Preparation:
- Heat the oil in a skillet over medium-high heat.
- Pour the buttermilk in a bowl.
- In a separate shallow bowl, mix together the flour and breadcrumbs.
2. Cook the chicken:
- Dip the chicken in the buttermilk, then lightly shake off excess.
- Dip each chicken breast into the breading mixture, pressing the flour mixture onto the chicken to adhere. Ensure the chicken is evenly coated, then place in the skillet.
- Fry until golden, about 5-6 minutes, then flip and cook the other side for 4-5 minutes, or until cooked through.
3. Add the Cheese:
- Place a slice of mozzarella on top of each breast, cover and cook for 1 minute to melt the cheese.
4. Make the Sauce:
- Mix the mayonnaise and pesto in a small bowl. Spread it evenly on the inside of both slices of bread
5. Build the Sandwich:
- Add 1 cutlet to each bun, then top with some spinach or arugula.
