These delicious gluten-free chocolate chip cookies are a quick and easy treat that everyone can enjoy!
These cookies are what we like to refer to as a “healthy treat” at our house. In contrast to your traditional chocolate chip cookie, this recipe calls for no refined sugar, no white flour, and is chocked full of healthy fats. The perfect justification for me to eat like 7 right?! Just kidding…. but am I?
But in all seriousness this recipe is a cinch to make and is great for seasoned gluten-free eaters as well as newbies. Made entirely of almond flour (basically just ground almonds) this recipe yields a more cake-like cookie with a soft tender texture.
I like to use mini chocolate chips to make sure I get chocolate in every bite but they also work great with dark or semi-sweet.
Once you portion out your dough, bake those beauties until they are just barely browning along the edge and enjoy!

Gluten-Free Chocolate Chip Cookies
Ingredients
- 2 2/3 cups almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 1/2 c. pure maple syrup
- 2 eggs
- 1/4 cup coconut oil
- 1 cup mini chocolate chips
Instructions
- Preheat your oven to 375 degrees F. and line a baking sheet with parchment paper or a nonstick baking mat.
- In a large bowl mix together the almond flour, baking soda, and salt.
- In a separate bowl combine the eggs, maple syrup, and vanilla.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Melt the coconut oil in a microwave-safe bowl and slowly add it to the batter.
- Mix until the oil is incorporated.
- Add the chocolate chips and stir until combined.
- Using a cookie scoop, place the dough on your prepared baking sheet making three columns of four.
- Bake cookies 8-9 minutes or until they are barely browning on the edges.
- Cool, serve, and enjoy!
