Easy Fruit Pizzas
With all of the fresh summer fruits available right now, I thought I’d try a recipe that combines a few of my favorite things – juicy berries, cream cheese frosting, and sugar cookies!
The kids and I had such a fun time creating (and EATING!) these fruit pizzas. Not only are they delicious, they’re also super simple to make! Here’s how:
How To Make Mini Fruit Pizzas
INGREDIENTS –
- baked sugar cookies: I had leftover sugar cookie dough in my fridge from our 4th of July Cookies, but you could use store-bought refrigerated cookie dough or premade cookies from the bakery at your grocery store for this sugar cookie base.
- butter
- cream cheese
- powdered sugar
- vanilla extract
- fresh fruit: strawberries, blueberries, blackberries, raspberries, mandarin oranges, peaches, kiwi, pineapple, mango, etc.
DIRECTIONS –
Make the cream cheese frosting by adding the butter and cream cheese to a large mixing bowl. Beat with a hand mixer on low speed until combined.
Add the confectioners sugar (a little at a time) to the cream cheese mixture, and continue to whip on low. speed, then mix in the vanilla.
After your cookies come out of the oven and have completely cooled, frost generously, then top with fruit.
Eat and enjoy your fruit pizza cookies immediately, or store them in an airtight container in the fridge for up to 1 week.
