Coconut Macaroon Cookies
Eating coconut always feels a little like a mini tropical vacation to me – it’s one of my favorite flavors!
These coconut macaroons are a great way to enjoy the delicious coconut flavor in sweet cookie form. They’re incredibly simple (only five ingredients!), they take only a few minutes to mix together, and they taste amazing!
The ingredients to this recipe are easy to keep on hand and pull out when you need a quick teacher or neighbor gift or when you have last-minute guests drop by.
While typically made as a classic holiday cookie, these coconut macaroons are perfect for any occasion! They’re perfect for dipping into milky hot chocolate or sprinkling with icing sugar.
How to Make Coconut Macaroons
INGREDIENTS –
- shredded coconut
- sweetened condensed milk
- vanilla – vanilla extract works just fine, but I used my favorite vanilla bean paste, so you can see a few little vanilla flecks in the texture if you look closely.
- egg whites
- salt
DIRECTIONS –
MIX THE INGREDIENTS. You’ll start by mixing together coconut flakes, sweetened condensed milk, and vanilla in a large mixing bowl. You’ll then gently fold in some whipped egg whites, and the dough is finished!
PREP. Scoop the dough by rounded tablespoons onto a parchment paper or silicone-lined baking sheet. You can use an ice cream scoop or cookie scoop to make them all the same size.
BAKE. Bake them in the oven until golden, then let them cool on a wire rack.
Seriously, so easy!
STORAGE –
Store any extras in an airtight container at room temperature for up to one week.
VARIATION –
While these macaroons are pretty fantastic as-is if you want to make them even more decadent, melt some chocolate and drizzle it over the cookies. You could also dip the bottoms of the cookies in melted chocolate and let them harden.

Coconut Macaroons Recipe
Ingredients
- 14 oz coconut, shredded
- 14 0z condensed milk, sweetened
- 2 teaspoons vanilla
- 2 egg whites, large eggs
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 325. In a large bowl, mix together the coconut, sweetened condensed milk, and vanilla.
- In a medium bowl or the bowl of a stand mixer, beat the egg whites and salt, until medium stiff peaks form. Fold the egg white mixture into the coconut mixture.
- Drop the coconut mixture by rounded spoonfuls onto a parchment or silicone lined baking sheet. Bake 20-25 minutes, or until golden brown.
