These sweet coconut macaroons are the perfect combination of crisp and chewy, and so rich and delicious!
Are you a coconut fan? It is definitely one of my very favorite flavors! Somehow eating coconut always feels a little like a mini tropical vacation to me. 🙂 These coconut macaroons are a great way to enjoy that delicious coconut flavor in sweet cookie form. They’re incredibly simple (only five ingredients!), they take only a few minutes to mix together, and they taste amazing! I love having easy holiday recipes on hand that I can pull out when I need a quick teacher or neighbor gift, or have some unexpected guests drop by. These coconut macaroons are perfect for any occasion!
You’ll start by mixing together coconut flakes, sweetened condensed milk, and vanilla. I used my favorite vanilla bean paste, so you can see a few little vanilla flecks in there if you look closely. You’ll then gently fold in some whipped egg whites, and the dough is finished!
Scoop the dough by rounded spoonfuls onto a parchment or silicone lined baking sheet, then bake until golden. Seriously, so easy!
If you want to make them even more decadent, you could drizzle them with a little melted chocolate or even dip the bottoms in chocolate. They’re pretty fantastic as-is, though! Both of my kids have inherited my coconut-loving genes, and they could not get enough of these delicious cookies. Give them a try and see how delicious they are for yourself!
