This breakfast crescent ring is a fun way to serve an impressive and hearty breakfast that includes everyone’s favorite breakfast foods all in a single slice. A crescent dough ring filled with eggs, sausage, bacon, cheese, and tater tots is baked until warm, gooey, and golden!
I’m a big fan of easy, delicious, and creative breakfast recipes. It’s recipes like sheet pan breakfast sandwiches and scrambled egg sandwiches that make it easy for me to feed a crowd and ensure no one leaves the house without eating in the morning!
This stuffed crescent roll ring is just as easy for any week day but because it looks like a centerpiece, it’s just as perfect for a special occasion breakfast or brunch!
The ring is easy to make using store-bought crescent dough and a ramekin or circular object to put in the middle until it’s assembled. Then, it gets filled with scrambled eggs, tater tots, bacon, and cheese but it’s very easy to make ingredient swaps.
Baked until golden brown, this breakfast crescent ring is a fun and delicious way to ensure everyone gets a piece with a little bit of everything!
Why You’ll Love This Recipe
- A different way to use up the tube of crescent rolls.
- It’s fun to look at and just as delicious to eat.
- Under 30 minutes of baking time and it’s ready to serve!
- Completely customizable to suit your tastes.
Ingredients Needed
- Tater Tots: You’ll find these little crispy potato bites in the freezer section of the grocery store. Cook straight from frozen according to package directions.
- For the eggs: Large eggs, heavy cream, salt, and black pepper.
- Bacon: Cook bacon ahead of time using a skillet or the oven for less splatter. Chop the bacon into 1/2” pieces.
- Breakfast sausage: I use pork breakfast sausage. Cook it fully and chop it.
- Crescent dough: You’ll need 2 cans of crescent roll dough for a 16 piece ring.
- Cheddar cheese: I always encourage freshly grated cheddar from a block, but since we’re all about shortcuts today, you can certainly use pre-shredded cheese for this breakfast ring.
- Optional dipping sauce: Maple syrup, ketchup, hot sauce, or white gravy.
How to Make a Breakfast Crescent Ring
Step 1: Whisk the eggs, cream, salt, and pepper in a large bowl and pour it into a large skillet over medium-low heat. Scramble the eggs until fluffy and remove them from the heat.
Step 2: Open the crescent rolls and separate the triangles tearing them apart at the perforated seams.
Step 3: Place a 5-inch ramekin (or circular object) and place it onto the center of a pizza stone or parchment-lined baking sheet. Arrange the triangles around the outer edge of the ramekin placing the long edge at the base so the tips are facing outward (like a sun). They should touch and overlap slightly.
Step 4: Spoon the scrambled eggs over the dough close to the ramekin. Then, sprinkle the bacon, sausage, and cheese. Top with tater tots.
Step 5: Remove the ramekin, take the tips of the dough, and fold them over the filling. Tuck them until the longer edges so they’re enclosed. You will still see some filling between each one.
Step 6: Bake for 20-25 minutes until the dough is golden and the cheese is nice and melty. Let it cool slightly before serving with your favorite dipping sauce.
Recipe Tips & Variations
- For an even deeper golden crust, feel free to brush the top with an egg wash or melted butter before baking.
- Add veggies like mushrooms, red bell peppers, green bell peppers, asparagus, spinach, or sauteed onions.
- If you do add veggies, cook them first, then drain off any excess liquid so they don’t make the filling mushy.
- Swap the bacon for diced ham, or skip it altogether.
- No tater tots? No problem, use hashbrowns instead!
- If you prefer a different kind of protein, you can use turkey sausage, chicken sausage, or spicy Italian sausage instead.
FAQs

- 12 large eggs
- ½ tsp salt
- ¼ tsp pepper
- 6 strips of bacon, fully cooked and cut into ½ inch wide pieces
- 6 ounces pork breakfast sausage, fully cooked and chopped
- 2 cans refrigerated crescent dough
- ¾ – 1 cup cheddar cheese, grated
- maple syrup, ketchup, hot sauce or white gravy, optional for dipping
Instructions
- Preheat the oven to 350.

- Cook the egg mixture in a large skillet until fluffy, 3-5 minutes. Remove from heat.
- Unroll both cans of crescent dough and separate into 16 triangles.
- Place a 5-inch ramekin in the center of a pizza stone, then arrange the triangles in a ring around the ramekin to look like a sun – the dough touching the ramekin should overlap just slightly.
- Spoon the eggs over the dough closest to the ramekin. Sprinkle the bacon, sausage, and cheese, and top with tater tots.

- Let cool slightly, then serve with desired sauces.
