The Best Mac & Cheese
If you’re looking for a simple weeknight dinner that tastes amazing and is made in a snap, this Brisket Macaroni and Cheese is perfect! This recipe is inspired by a Disney dish from Smokejumpers Grill in California Adventure. They took a bowl of classic comfort food and gave it a fancy twist that makes it simply amazing!
It’s creamy and cheesy, tangy and sweet, and the crunch of the french fried onions is the absolute best way to top it off! Here’s how to make it –
Ingredients
- Macaroni and Cheese – Directions for this are below. It’s delicious, and so simple!
- BBQ Brisket – You can smoke your own brisket, pick some up your favorite barbecue restaurant, or buy a packaged brisket from the deli section at your grocery store.
- Onions – Disney serves theirs with pickled purple onions, but they are hard to find at the grocery store. You can make your own, or just use sliced raw purple onions.
- French Fried Onions
How to Make Brisket Mac and Cheese
PREPARE THE PASTA – Cook macaroni noodles according to package instructions. Drain and set aside.
MAKE THE CHEESE SAUCE – Melt butter in a large pan oven over medium heat. Add flour and whisk until smooth and light brown in color. Slowly add the milk, whisking to break up any lumps that form until milk begins to simmer. Reduce heat to low. Add shredded cheddar and cream cheese. Whisk until smooth.
COMBINE – Add the macaroni to the cheese sauce and stir to combine. Season with salt and pepper, to taste.
SERVE – Scoop Mac ‘n Cheese onto each plate. Add smoked brisket. Top with a drizzle of barbecue sauce, red onions, and fried onions.

Ingredients
for the macaroni and cheese
- 1 pound elbow macaroni
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 cup cream cheese
- salt + pepper, to taste
for the toppings
- 1 lb. approx BBQ beef brisket, cooked
- 1 cup barbecue sauce
- 1/2 purple onion, thinly sliced
- 1 cup French fried onions
