Now that the weather is getting warmer, my dinner cravings have started to change. Instead of hearty soups and warm casseroles, now I’m craving fresh salads and anything grilled. It’s becoming more and more of a struggle to turn on the oven to cook dinner. I just want to be outside enjoying the warm weather! This strawberry balsamic chicken salad is the perfect summer meal. It’s quick and easy, doesn’t require heating up the oven, and tastes so fresh and delicious. By tossing together just a few simple ingredients, you can have a flavorful and delicious meal in no time. This time of year, there is so much fresh produce available, and it would be a shame not to enjoy it!

Strawberry Balsamic Chicken Salad
- Marzetti® Simply Dressed® Balsamic Vinaigrette Salad Dressing
- 4 cups spring mix
- 1 large cooked chicken breast, cut into strips
- 1 cup strawberries, sliced thinly
- 1/4 cup chopped celery
- 1/4 cup toasted almonds
- 1/4 cup crumbled gorgonzola
- Assemble the salad by layering the spring mix, chicken breast, strawberries, celery, almonds, and gorgonzola.
- Top with balsamic dressing and enjoy!
- The salad can be prepared up to 24 hours in advance, with dressing added just before serving.
